Ingredients
- 600g Boiled and peeled potatoes
- Chilli flakes – 3 Tbsp
- Onion sliced – 3
- Green Chillies – 2-3
- Turmeric powder – 1/2 Tsp
- Ground pepper – 1 levelled Tbsp
- Salt -1/2 Tsp (adjust to your liking)
- Lime juice – ½ a lime
- Price of cinnamon – about 2 inches
- A few curry leaves
- A few pandan leaves
- Cooking oil – 3 Tbsp
Process:
- Heat a pan and add 3 Tbsp of cooking oil
- Add cinnamon, curry leaves and pandan leaves and let them fry for a ½ min
- Add turmeric, and salt and mix well
- Add boiled potatoes and gently mix well by using a spoon or tossing
- Make a well and add chilli flakes and fry it until combined with the oil
- Add onion and chillies and mix well for even coating
- Cover the lid and cook for about a couple of minutes
- Taste and adjust the salt and add pepper as well
- Mix very well and cover the lid and cook for about 3 minutes
- Add ½ a lime juice and give a good mix
- The dish is ready to be served.
